In a large pot, add oil over medium high heat.

Add onion, garlic, and ginger.
Next, saute well.
Reduce heat and add half cup water and cook on low heat until vegetables are tender.

Mash with potato masher or fork for a few minutes adjusting consistency.
Season with salt, then add lemon juice and garam masala.
Serve with toasted bread, topped with cilantro and a wedge of lemon.
